TZATZIKI SAUCE

 Ingredients

·        1 cup plain Greek yogurt

·        1 cup shredded or diced English cucumber

        Seeded, shredded and drained – you can leave the skin on if using English cucumber

·        1-2 Tbsp of ground cumin (this is my secret…)

·        2 Tbsp lemon juice or white wine vinegar 30 mL

·        2 4 cloves garlic grated or minced (however you like it – I LIKE IT!)

·        1-2 Tbsp Fresh chopped dill

·        1-2 Tbsp Extra Virgin Olive Oil (another Joy secret)

·        Salt and pepper to taste

Instructions

1.                Prep cucumber: Scoop out the seeds of your cucumber. Sprinkle a pinch of salt onto shredded or diced cucumber and spoon into cheesecloth, paper towels or strainer. Let sit for a few minutes then wring it out to draw out moisture.

    • If you are using an English cucumber, you can leave the skin on. If not, I recommend pealing the cucumber.

2.                Mix: Mix together yogurt, cucumber, dill, garlic, cumin and lemon. Season with salt and pepper to taste.

EVEN better the next day! I let sit in fridge for at least 4 hours or overnight to let the ingredients bloom.

Fun Facts about the ingredients: Experiment all you want! It takes time to make it your own. Want more/less garlic, your choice. Don't like Cumin? Don't add it!

  • Cucumber – I prefer to use a large English cucumber.
  • Greek yogurt – I used to buy plain full fat yogurt but have switched to nonfat and it is unbelievably creamy and delicious.
  • Sour Cream – Adds that extra something…
  • Lemon juice – one good sized lemon will due
  • Garlic – minced or grated super fine.
  • Cumin – Provides a hint of smokey element.
  • Fresh dill – there’s simply nothing better.
  • Salt – needed to balance out the tart from the lemon and yogurt.
  • Extra Virgin Olive Oil – Adds to the smooth creamy texture.
  • Prepare the cucumber. Cut the ends off, slice it in half lengthwise, and scoop the seeds out. Grate the entire cucumber (I find the food processor is easy) and then toss it with the salt.
  • Remove excess moisture. You’ll set this mixture in a strainer for about 15 minutes to allow some of the moisture to escape. Before adding the cucumber to the remaining ingredients, you’ll squeeze out as much moisture as possible.
  • Mix! The final step is simply to mix all of the ingredients together and you’re done! Of course, give it a taste and add more of anything that it needs.
