Uncle Chris’ No Need Dough Recipe

Ingredients
- 7 1/2 cups (900g) King
Arthur Unbleached All-Purpose Flour Or All Purpose Flour
- 3 cups (680g) water, lukewarm
- 1 tablespoon (18g) table salt
- 1 1/2 tablespoons (14g) instant yeast or active dry yeast
- Measure ingredients accurately, preferably by weight.
- Mix all ingredients in a large bowl to form a sticky dough.
- Mix thoroughly using a stand mixer at medium speed for 30-60 seconds, or by hand with a large spoon or dough whisk until all ingredients are well combined.
- Cover and let rise at room temperature for 2 hours.
- Refrigerate for at least 2 hours or up to 7 days.
- When ready to bake, grab a portion of dough (400g-540g).
- Shape into a ball or log on a floured surface.
- Place on parchment paper or greased baking sheet.
- Dust with flour and cover with greased plastic wrap.
- Let rise at room temperature for about 60 minutes.
- Preheat oven to 450°F with a baking stone (if using)
- Place a shallow metal or cast-iron pan (not glass, Pyrex, or ceramic) on the lowest oven rack, and have 1 cup of hot water ready to go.
- Slash the loaf 2-3 times, about 1/2" deep.
- Place bread in oven and add 1 cup hot water to the shallow pan or cast-iron pan.
- Bake for 25-35 minutes until golden brown.
- Cool on a rack before storing or serving.
