Uncle Chris’ No Need Dough Recipe


Prep 5 mins        Bake 30 to 40 mins        Total 5 hrs 35 mins

Yield 3 or 4 loaves, depending on size

 

Ingredients

  1. Measure ingredients accurately, preferably by weight.
  2. Mix all ingredients in a large bowl to form a sticky dough.
    • Mix thoroughly using a stand mixer at medium speed for 30-60 seconds, or by hand with a large spoon or dough whisk until all ingredients are well combined.
  3. Cover and let rise at room temperature for 2 hours.
  4. Refrigerate for at least 2 hours or up to 7 days.
  5. When ready to bake, grab a portion of dough (400g-540g).
  6. Shape into a ball or log on a floured surface.
  7. Place on parchment paper or greased baking sheet.
  8. Dust with flour and cover with greased plastic wrap.
  9. Let rise at room temperature for about 60 minutes.
  10. Preheat oven to 450°F with a baking stone (if using)
    • Place a shallow metal or cast-iron pan (not glass, Pyrex, or ceramic) on the lowest oven rack, and have 1 cup of hot water ready to go.
  11. Slash the loaf 2-3 times, about 1/2" deep.
  12. Place bread in oven and add 1 cup hot water to the shallow pan or cast-iron pan.
  13. Bake for 25-35 minutes until golden brown.
  14. Cool on a rack before storing or serving.
